Simmered Nukamiso Dish

Great with drinks and great alongside a meal, the nukamiso (salted rice-bran paste)is added to blueback fish such as mackerel or Japanese sardines simmered in soy sauce and mirin.  An example of Kitakyushu local cuisine, the flavor varies widely based on the particular nukamiso used.

In recent years bamboo shoots and other ingredients have come to be used in simmered nukamiso dish, leading to many different types.  Even souvenir nukamiso packages have become popular.
